Eat Your Greens started with one chef's frustration: that "fresh" salad greens rarely tasted like much at all. Ian King spent years in kitchens across Sydney, Byron Bay and Auckland before deciding the industry didn't need another restaurant, it needed better greens. In 2018, he swapped the pass for the paddock and started growing.
Nearly a decade on, we're still doing it his way: organic, heirloom, grown in living soil, and harvested at hours most people are asleep, because flavour, to us, is worth losing sleep over.
Meet the growers
Ian King
Founder & Head Grower Ian's the reason Eat Your Greens exists. An ex- chef, he set out to grow the greens he always wished someone would deliver to his kitchen door, organic, full of flavour, and never a compromise. These days he still does the early starts himself, up at 3am every Tuesday and Friday to harvest.. When he's not on the farm, he's usually surfing, playing guitar or relishing family time.
Kat King
Co-founder & COO Kat runs the commercial side of Eat Your Greens, and keeps Ian's standards honest, at scale. Her background spans across HR to Sales to Strategy, including time at Aesop, Lightspeed, Trademe and tech start-ups, she's brought a true obsession with brand integrity to a farm with big ambitions. She oversees the systems, people and retail relationships that ensure the growing philosophy reaches more kitchens and more kitchen tables, without cutting a single corner.

how we grow
We grow organically, in the rich peat soil of Matakana, using heirloom varieties chosen for how they taste rather than how much they yield. BioGro certified organic and NZ GAP certified, our growing methods are as much about the soil's health as they are about what ends up on your plate.
Freshness isn't a slogan for us. Every Tuesday and Friday, Ian's up at 3am to harvest and deliver direct, the same day, no cold storage, no compromise.

Be good to the ground we grow in. Organic, heirloom, regenerative, because doing right by the soil is what makes the flavour possible.
Never settle for the same old salad. We're always trialling new varieties, new leaves, new combinations, because "good enough" isn't in our vocabulary.
